Recipe of the week - Brunch Eggs

This is my favourite brunch recipe, it's delicious, healthy and the perfect set-up for a busy day.

If you want to add meat to this dish you could trying adding some Chorizo or Sausage. #uwehallslife

Ingredients

 Brunch for two
2 Eggs
1 handful spinach
3 Tomatoes
1 handful mushrooms
Sun dried tomatoes (optional)
Cheese
Salt & Pepper
Garlic
Butter
Bread
Balsamic vinegar glaze (optional)

Steps

  1. First saute mushrooms and garlic in butter over a medium heat.

  2. While the mushroom are cooking, chop the tomatoes and spinach - we are using frozen spinach but you can use anything that you have at home. We've also added some sun dried tomatoes to give some sweetness to the dish. After around 10 minutes add the tomatoes and spinach

  3. When the veg is almost done - toast two pieces of bread

  4. Now the vegetable are nearly done, crack two eggs into the pan. Add salt, pepper and grate over a little cheese. Cook till the eggs are almost done and then finish off under the grill for a couple of minutes or until the eggs are cooked to your taste. I like to make sure mine are runny.

  5. When the toast and eggs are done its time to assemble your brunch. I like to add a bit of balsamic glaze to my toast and then serve the eggs and veg on top :)
