Recipe of the week - Aubergine Parmo

The ultimate veggie comfort food.

Ingredients for two

2 Aubergines

1 Onion

4 Cloves of garlic

1 Tin of tomatoes

2 Fresh tomatoes

1 Ball of mozarella



Basil / Oregano / Thyme (optional)


-Scoop out the middle of the aubergines and set aside

-Fry the onions, garlic, inside of the aubergine in a little oil

-After around 10 mins add 1/2 of the tin of tomatoes, the fresh tomatoes (sliced) to the above mix. Here if you want to get creative you can add different herbs (try basil oregano or thyme) or other vegetables

-Whilst you are frying the ingredients, line the bottom of an oven proof dish with the rest of the tin of tomatoes, place the hollowed out aubergines on top and season with salt and pepper and sprinkle olive oil over the top..

-Scoop the tomatoes and aubergine mixture you've been frying into the hollowed out aubergine. Top with slice mozzarella, shavings of parmesan and breadcrumbs

- Bake for around 20 mins and its ready to serve with garlic bread or salad
