National Vegetarian Week is the perfect opportunity to try something new. Why not test yourself to become a veggie for a whole week beginning Monday 10th May, you never know you may love it!

Whether you're a meat-lover who can't imagine life without it or someone who's willing to give it a go, there's an endless list of benefits from vegetarianism. 

Aside from all the hidden health benefits being meat-free brings you, there's so much more to think about! You'll save money, lose weight, help reduce pollution, avoid toxic chemicals and help reduce famine - what's not to like?!

If you don't feel you could quit meat cold turkey (no pun intended!), then try flexitarianism. The flexitarian diet is plant-based with the occasional addition of meat, which could mean eating only a few meat-free meals a week. 

Although not a full-time veggie, you'll be reaping the benefits of this healthy lifestyle when you feel like it.

These five recipes make for the perfect mid-week meal as they all take less than 40 minutes to prepare and cook! 

  • Sweet potato cakes 
    The perfect dinner to make if you are in a rush or just want something quick and easy, plus it's gluten-free!
  • Creamy broccoli gnocchi
    If you want something that is going to be healthy yet filling this is exactly what you need, if you're not a gnocchi fan, just swap it out for pasta, simple.
  • Veggie tahini lentils
    This dish is also vegan and is packed with loads of healthy greens and a whopping 13g of protein. You can freeze the leftovers to save waste!
  • Black bean burgers
    You don't have to miss out on burger night in your flat! These indulgent treats come with oozy mozzarella and balsamic onions. Yum!  
  • Wholewheat pot noodle
    Not the kind you might be familiar with! This healthy lunch can be made the night before lectures and grabbed on your way out.
