Sweet Potato, Mango & Black Bean Quinoa Recipe

Ingredients (Makes 4 portions)

500g sweet potato, cut into wedges
10ml rapeseed oil
250g quinoa
375g cooked black beans, rinced
250g mango, peeled & sliced
75g spring onions, sliced finely
25g poppy seeds
25g sunflower seeds


50ml rapeseed oil
1 lemon, juice & zest
Salt & pepper to taste


  • Preheat oven to 180C
  • Toss sweet potatoes in the 10g rapeseed oil and roast for 20-25 minutes
  • Cook quinoa in boiling water for 10-15 minutes
  • Refresh the black beans in boiling water just to heat through
  • To make the dressing mix oil, lemon & seasoning together until combined
  • Mix the quinoa and beans with the dressing
  • To serve divide between 4 bowls and serve with mango and roasted sweet potato divided between
  • Sprinkle with spring onion and seeds
