Super Eggs Recipe

Ingredients (Makes 4 portions)

40g salted butter
8 free range eggs
2 ripe avocado
2 ripe plum tomatoes
½ red chilli, thinly sliced
100g feta
30g toasted pumpkin seeds
30g toasted linseeds
Salt and pepper to taste


  • Chop the avocado and tomato to around 1.5-2cm cubes
  • Melt butter and scramble the eggs, seasoning well
  • Mix with avocado and tomato and portion into bowls
  • Sprinkle feta, seeds and chilli over the top to serve
