Quesadillas Recipe

8 flour tortillas
500g cheddar cheese, grated
2 spring onions, finely sliced
1 sweet red pepper, cored & sliced
1 bunch coriander, chopped finely
120g jalapeños, sliced
30g smoked paprika
Oil to fry
Soured cream to serve


  • Mix cheddar, spring onions, pepper, jalapeños and coriander
  • Sprinkle mixture evenly between tortillas and dust lightly with paprika
  • Press new tortilla on top of first 4, pressing down firmly to stick together
  • On a low heat, fry on both sides in a very small amount of oil until filling has melted
  • Serve immediately with soured cream
