Kale, Potato & Thyme Soup Recipe

3 tbsp. rapeseed/vegetable oil
1 medium white onion (Washed, peeled and diced to 1cm)
1 large leek (Washed and sliced to 1cm)
1 stick celery (Washed and diced to 1cm)
1 clove garlic (finely chopped)
1g fresh thyme
140g potatoes (Washed, peeled and diced to 1cm)
700ml vegetable stock
1 large handful kale (finely shredded)
Salt & pepper to season


  • Heat a saucepan with the oil and fry onions, leeks, celery, garlic & thyme until soft
  • Add potatoes and vegetable stock
  • Bring to boil, reduce to simmer for 30 minutes
  • Add kale, cook for 5 minutes
  • Using a hand blender, carefully blitz until smooth – Checking seasoning
  • Optional – Add a few tablespoons of double cream to serve
