Irish Boxty Recipe

500g grated raw potato
500g plain flour
1 heaped tsp. baking powder
2g salt
500 mashed potato, leftovers work well
200ml buttermilk
Oil for frying


  • Squeeze excess moisture out of grated potato using a sieve or clean cloth
  • Mix flour, salt and baking powder together
  • Combine the flour with raw & mashed potato in a large bowl
  • Mix in the milk a little at a time to make a batter. It should be a thick heavy batter, although more water may be required
  • Heat a heavy pan, add oil and drop in the potato mix to make a round shape
  • Cook on both sides until golden brown & the potato is cooked through
