Gin & Tonic Drizzle Cake Recipe

260g unsalted butter
260g caster sugar
2 large eggs, beaten
260g plain flour
15g baking powder
5 lemons, zested
160ml tonic water
100g gin
50g granulated sugar


  • Preheat oven to 170°c
  • Cream butter & sugar until smooth
  • Add egg slowly and mix until smooth
  • Sieve in flour & baking powder and combine to make smooth batter, adding lemon & tonic water
  • Pour mixture into a greased & lined 900g loaf tin and bake until golden and springy to the touch, approx. 45 minutes
  • Remove cake from oven and immediately pour or brush over the gin – Allow to cool before serving
