Fatayer Recipe

Halloumi & Parsley Pies (Makes 10)


290g plain flour
75g warm water
20g plain yoghurt
7g instant dry yeast
3 tbsp. olive oil
1 tsp sugar
1 tsp salt
45g parsley, chopped
320g halloumi, grated


  • Place cheese and parley in a bowl and mix well
  • Add flour, yoghurt, water, oil, sugar, salt and yeast together in another bowl and knead for a minimum 5 minutes to form a pliable dough – Set aside to rise for 40minutes in a warm (not hot) place
  • Preheat oven to 200C
  • Break dough into golf ball sized pieces and roll into thin oblongs
  • Place a level tbsp. halloumi & parsley mixture along the middle
  • Fold over the long sides and pinch both ends to form a boat shape. Press down firmly on the whole thing with your palm then transfer to a baking tray
  • Bake for 15 minutes until golden brown
