Coriander & Lime Chicken Recipe
Ingredients
350g chicken thighs
100g coriander, finely chopped
100ml rapeseed/vegetable oil
2 cloves garlic, crushed
Zest and juice of 2 limes
50ml soy sauce
Method
- Place chicken into a plastic mixing bowl
- Combine other ingredients to created a paste
- Add the marinade to chicken, ensuring thoroughly coated
- Place in a sealed container for minimum 3 hours but ideally overnight
- Heat a large frying pan over a medium heat
- Add chicken and cook thoroughly
- Serve with egg noodles or sticky rice
