Coriander & Lime Chicken Recipe

350g chicken thighs
100g coriander, finely chopped
100ml rapeseed/vegetable oil
2 cloves garlic, crushed
Zest and juice of 2 limes
50ml soy sauce


  • Place chicken into a plastic mixing bowl
  • Combine other ingredients to created a paste
  • Add the marinade to chicken, ensuring thoroughly coated
  • Place in a sealed container for minimum 3 hours but ideally overnight
  • Heat a large frying pan over a medium heat
  • Add chicken and cook thoroughly
  • Serve with egg noodles or sticky rice
