Scrumptious Spring Recipes: Rich Gnocchi Tomato Bake

This tasty recipe might only have a few ingredients but is packed full of flavour! It's ideal if you’re looking for a recipe to share or maybe you want to use your leftovers for lunch the next day. 


  • 500g gnocchi
  • Tin of chopped tomatoes
  • 1 onion, chopped
  • 1 red pepper, chopped and de-seeded
  • 1 garlic clove, crushed
  • 1 tbsp olive oil
  • Mozzarella
  • Salt and pepper
  1. In a frying pan, add your oil, garlic, onion, pepper and cook for 5 minutes until softened
  2. Add your chopped tomatoes and gnocchi and allow it to simmer away for 10-15 minutes. Stir the sauce regularly
  3. Preheat your oven to 180 degrees Celsius
  4. Once your gnocchi is soft, add everything to an ovenproof dish and season with salt and pepper
  5. Top the dish with mozzarella
  6. Bake in the oven for 10 minutes until the cheese has melted
  7. Serve the dish warm with fresh bread

You can easily make this recipe non-vegetarian by adding chorizo or cooked chicken before baking the dish.
