Diwali Special Chicken Curry Recipe
This Saturday night in, the recipe is for all our Indian friends celebrating Diwali away from home this year.
Ingredients
- ½ kg chicken boneless or with bones
- Cooking oil
- 5-6 tomatoes
- Cumin powder to taste
- Turmeric powder to taste
- Paprika according to your spice level
- Chilli flakes
- Salt to taste
- Yogurt 1 tbsp
- Coriander
- Green chillies
- Lemon
Preparation
Heat the cooking oil in a wok pan and add the chicken. Let it cook in the hot oil for about 2-3 minutes and then add the spices according to your taste and spice levels.
Mix the chicken and spices together and close the lid for about 3 minutes. My secret of getting the perfect curry is to split the tomatoes into half and place them upside down on the chicken and let them steam with the lid closed for another 3 minutes.
Once you see the steam inside the wok, remove the lid and remove the skin from the tomatoes with a kitchen tong or you can use a fork as well (it will come off very easily).
Mix the chicken with tomatoes together and let them cook on low to medium heat for about 5 minutes.
To make the curry a little thick, you can also add yoghurt. What I love about yoghurt is that it will make the curry into a thick yet pourable consistency of the gravy.
Once the chicken curry is ready, transfer everything to a platter, add some chopped coriander, lemons, green chillies and serve hot with white rice or Naan!
