5 of the Easiest Fresher's Recipes

Once you move to university, you may suddenly panic when you realise all you can cook is a pot noodle. But not to worry, here are 3 of my quickest and easiest recipes to keep you going through freshers.



1. Cheese and Baked Bean Toastie

Don't judge - this is like cheesy beans on toast...but in a toastie? Perfect for a quick, cheap snack. Plus it's definitely worth investing in a sandwich toaster, you can buy one for under £10 at most supermarkets. 

Ingredients

  • Bread
  • Butter
  • Cheese
  • Baked beans

Method

  1. Turn the sandwich toaster on
  2. Butter both sides of 2 slices of bread
  3. Spoon the beans onto 1 slice of bread (as much as you want but don't overdo it as the beans will escape when cooking)
  4. Sprinkle as much cheese as you want onto the beans
  5. Put the other slice of bread on top to make a sandwich
  6. Put the sandwich onto the sandwich toaster without the whole contents falling out (good luck)
  7. Close the lid of the sandwich toaster and toast until brown (most sandwich toasters have some sort of timer or will turn green so can always use that)
  8. Remove from toaster and devour
  9. Can dip it in ketchup...or more beans...



2. Jacket Potato with Cheese and Beans

Mastering this is an essential life skill...

Ingredients

  • 1 large baking potato
  • Baked beans
  • Grated cheddar cheese
  • Salt & pepper

Method

  1. Preheat the oven at 200°C
  2. Pierce the potato through the middle with a sharp knife
  3. Place on a plate and put in the microwave for 5 mins
  4. Then turn the potato over and microwave for another 5 mins
  5. Put the potato in the oven for 3 mins (this makes it nice and crispy on top)
  6. Whilst the potato is in the oven, put half a tin of beans in a bowl and microwave for 2 mins
  7. Take the potato out of the oven and cut into a cross, sprinkle on salt and pepper
  8. Add the beans and sprinkle cheese all over
  9. Enjoy x



3. Fried Egg Sandwich

This is perfect for breakfast, lunch, brunch and any time in between.

Ingredients

  • Bread 
  • Egg
  • Salt & pepper
  • Ketchup

Method

  1. Fry the egg 
  2. Place the fried egg onto a slice of bread
  3. Put ketchup, salt and pepper all over
  4. Then gently break the yolk of the egg and spread all over
  5. Place another slice of bread on top of the egg and cut in half
  6. Bon appetite, mon amies!



4. Cajun Chicken Pasta

This spicy dish is great for a weekend or weeknight treat!

Ingredients 

  • Pasta
  • Cajun Seasoning
  • Cream of Crème Fraiche
  • Onion
  • Red Pepper

Method

  1. Add your pasta to a pan of boiling water on the hob and simmer on a medium heat
  2. Chop and fry onion and pepper in a pan with a little oil
  3. To make the sauce .....when the onion and pepper are almost cooked (around ten minutes) add the cream or crème fraiche to the pan. Then add 3 teaspoons of Cajun seasoning to the cream or crème fraiche or more to your taste
  4. Keep stirring the cream onion and pepper on a low heat till the sauce becomes a thick creamy consistency
  5. Add the pasta to the sauce and enjoy
  6. Serve with some parmesan or cheese and a salad



5. Salmon Parcels

Ingredients 

  • Salmon
  • Veg (anything you have) peppers, broccoli, courgettes
  • Onion
  • Honey
  • Soy sauce
  • Chinese five spice

Method

  1. Slice and dice your veg and an onion
  2. Place the salmon, veg and onion onto some foil
  3. Sprinkle the Chinese five spice over the salmon and veg and add good glug of soy sauce and honey
  4. Wrap the salmon and veg in a parcel and cook at 180 for 20 mins
  5. Voila
