Easy Vegetable Curry Recipe

Ingredients (Makes 4 portions)

2 red onion (sliced)
2 onion cloves (roughly chopped)
1 tin of tomatoes
240g tenderstem broccoli, chopped into chunks 
1 red pepper, thinly sliced
4 medium sized potatoes, thinly sliced
1 large courgette, chopped into bite size chunks
3 tbsp. curry powder
4 tbsp. tikka masala paste
olive oil

Method

  • Boil the potatoes while preparing the rest of the veg
  • Once cooked through, take the potatoes off the heat and drain. Put them to one side
  • Heat some oil in a large pan and once the pan is hot, add the onions. Cook the onions until soft, stirring often
  • Add the garlic, broccoli, courgette and red pepper
  • Add curry paste and stir well
  • After a couple of minutes, add the tomatoes and the curry powder
  • Add the potatoes and stir again

  • Season with salt and pepper

  • Finally taste test! You may want to add more powder and paste
