Tofu Noodle Soup
This tofu noodle from I Love Vegan is super tasty, is pretty simple to make and is great for those wintery evenings.
Top tip: It also works great with rice instead of noodles!
Quorn and Chickpea Curry
Quorn is a great replacement for those days where you’re missing something more solid and meaty. This curry from 'All Recipes' is full of flavour, and is also great the next day – once the Quorn has soaked up the sauce from the curry it is pretty difficult to tell the different between real and fake chicken!
Top tip: Add in any leftover veg you have in the fridge!

Easy Cajun Jambalaya
This heart-warming dish is fab for sharing with your housemates, or for putting in the freezer and saving for later. Also, if you’re a bit of a wimp like me, there’s no need to use the hot sauce, it still tastes super good.
Top tips: Add some chickpeas to add even more protein, as well as some courgettes.
And for dessert…vegan chocolate cake!
This chocolate cake isn’t called the best vegan chocolate cake for nothing. I reckon it would rank highly in any non-vegan baking competition. It’s a proper people pleaser, with most people’s response: “This is vegan?!”
Top tip – it’s even better as cupcakes, bake them for 12-15 mins.
